DAL TADKA DHABA STYLE

Dal Tadka is a popular Indian dish that is commonly found in dhabas, which are roadside eateries in India. It is a flavorful lentil curry made with a combination of lentils, spices, and a tempering of ghee (clarified butter) and spices. Here's a recipe for Dhaba-style Dal Tadka:
Ingredients:
- 1 cup mixed lentils (such as masoor dal, toor dal, and moong dal)
- 2 tomatoes, finely chopped
- 1 onion, finely chopped
- 2 green chilies, slit
- 1 teaspoon ginger-garlic paste
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon cumin seeds
- 1/2 teaspoon mustard seeds
- A pinch of asafoetida (hing)
- 2 tablespoons ghee (clarified butter)
- 2 tablespoons chopped coriander leaves
- Salt to taste
- Water for cooking
For the tempering (tadka):
- 2 tablespoons ghee (clarified butter)
- 1 teaspoon cumin seeds
- 4-5 garlic cloves, finely chopped
- 2 dried red chilies
- A pinch of asafoetida (hing)

Instructions:

1. Wash the lentils thoroughly and soak them in water for about 30 minutes. Drain the water and set aside.

2. In a pressure cooker or a large pot, add the soaked lentils, chopped tomatoes, chopped onions, green chilies, ginger-garlic paste, turmeric powder, red chili powder, cumin seeds, mustard seeds, asafoetida, ghee, and salt.

3. Add enough water to cover the lentils and vegetables. Stir well to combine all the ingredients.
4. If using a pressure cooker, close the lid and cook for about 4-5 whistles or until the lentils are soft and cooked. If using a pot, cover and cook on medium heat until the lentils are cooked and tender, stirring occasionally.

5. Once the lentils are cooked, mash them slightly with the back of a spoon or a masher to thicken the curry. Adjust the consistency by adding more water if needed.

6. In a separate small pan, heat ghee for tempering. Add cumin seeds and let them splutter. Then add chopped garlic, dried red chilies, and asafoetida. Fry until the garlic turns golden brown and gives off a nice aroma.

7. Pour the tempering over the cooked lentils and mix well. Simmer the dal tadka for a few minutes to allow the flavors to blend together.

8. Garnish with chopped coriander leaves and serve hot with steamed rice or roti (Indian bread).
